Around the World in 5 Days

As I was making my menus for this week, it occured to me that I really had a representation of several countries in my choices. I didn't do that on purpose, but I think it will be kind of fun. Could food cure a bit of my cabin fever? I'm always looking for dinner ideas, so I'll share mine with you.

Monday (MEXICO): Chicken Empanadas, Black beans, Chips and Salsa. I'm trying out a new recipe for the empanadas, and if I like it, I will post it later (on the recipe blog). I was really close to making Sour Cream Chicken Enchiladas or fajitas but decided to try something new.

Tuesday (CHINA): Orange Chicken with Fried Rice and mini eggrolls. This is another new recipe to me but it looks delicious. I've also been known to throw together my own stir fry with chicken (or beef), and veggies. I love using my wok. (PS - I am not making the eggrolls from scratch!)

Wednesday (ITALY): Linguine with Tomato-Basil Sauce, Spinach Salad, Garlic Bread. You can easily add shrimp or chicken to this recipe if you have a husband like mine who must have meat with each meal. Other yummy Italian alternatives could be Tortellini with Spinach Walnut Pesto (thanks, Amberly) or Chicken Parmesan.

Thursday (AMERICA's SOUTH): Skillet Fried Chicken, Mashed Potatoes, Creamed Corn, Buttermilk Biscuits. Yes, there is a shocking lack of green veggies in this meal. So what? This is one of Casey's favorite meals and I haven't made it in forever. I will post my recipes for the skillet fried chicken and creamed corn after this week...hopefully I'll remember to get some pictures of the food.

Friday (FRANCE): It's not my main dish, but the dessert that features French fare...Crepes (recipe courtesy of Dara). You can actually fill these beauties with savory instead of sweet fillings, but I'm sticking to strawberries, fresh cream, bananas and nutella for mine. Is it Friday yet?

Saturday and Sunday are lazy cooking days for me so we usually have leftovers, frozen pizza, sandwiches or take out. Sometimes I will cook something, but this week I'm trying several new recipes, which is kind of ambitious for me (especially considering food is still not my best friend these days) so I'm giving myself a break toward the end of the week.

All this, and you aren't even feeling well. Makes us perfectly fine people look like weenies! :o) I am very interested in the empanadas recipe, and OF COURSE orange chicken.

By the way, I found the recipe for Pei Wei's lettuce wraps. So now you can make them at home!!! Want it?

Okay, first of all, yum. Second of all, I'm with Mary on the lettuce wraps...I've heard they're online too. That might have to be a cooking experiment for us, too. Third, I'm much like Casey--I usually have to have meat with each meal, not so much as a formality, but more of a 'I get cranky with a lack of protein' type of deal. I think it's my blood type! And last, the crepes sound amazing!
